Famed Baja California chef Diego Hernández is opening his new restaurant named Diego in the Valle de Guadalupe Museo de la Vid y el Vino wine museum. The restaurant will serve an a la carte menu and an eight-course tasting menu titled Corazón de Tierra, in homage to Hernández’s former restaurant that closed in 2020 due to the pandemic. An extended tasting menu of 12 courses from the repertoire of Corazón de Tierra will be served at the chef’s counter inside the kitchen for eight diners. There will be three seatings a day for the chef’s counter.
Diners can currently reserve a seating at the chef’s counter. The standard tasting menu, and a la carte menu served in the regular dining room will be available with the restaurant’s grand opening on February 22, 2025.
