It's easy to see why Chicago's Aviary bar received the 2013 James Beard award for "Outstanding Bar Program." The cocktails created at Aviary are truly one of a kind and should be sipped, not gulped. Each cocktail has its own appeal and there is something for every palette from an alcoholic version of root beer (it tastes just like the popular soda drink complete with a foam top) to the most interesting version of a Manhattan you will probably ever see. The drinks aren't just delicious they are also a piece of art. Case in point is a drink called Tropic Thunder, where a see-through canteen is delivered to the table filled with alcohol, mixers, and herbs that changes color and taste as the drink is poured from the canteen into the glass.If you're thinking you can just show up and get in, think again. There are only a few spots available each night for guests who do not have a reservation and those spots are typically standing-room only. For those who want a guaranteed chance to experience Aviary make a reservation and do it well in advance of the night you intend on going. If you do get in, you may even be asked to go downstairs to the private bar (ala prohibition-style) downstairs where the mixologists make drinks not on the menu that come at a price, only you won't know what it is until the bill comes at the end of the night.
Recommend getting a reservation 3 months in advance.
