Vinos Aldo Cesar Palafox is located in the Old Wine Route, in the Valle de la Grulla, south of Ensenada, Baja California. The winery started making wine for own consumption since the late nineteenth century, which from 1997 became a family project for winemaking own grapes. In 2009, began its modernization, incorporating top - level technology, selection of grapes, tapered trunk and tanks; all this in a beautiful underground cellar, under the care of the enologist Reynaldo Rodriguez.
Thier vision focuses on recovering the winemaking tradition of the Valley Crane and Santo Tomas, creating wines of the highest quality.
They are constructing a beautiful new wine making facility and tasting room that is scheduled to open in 2016. Until then, clients get to enjoy their tastings in the beautiful and intimate garden area, drinking under the large oak trees with cool breezes coming all the way into the valley from the Pacific.
Thier vineyards have water quality of the nearby mountains and temperate climate that allows an excellent maturation of their vines. They currently have 35 hectares with Cabernet Sauvignon, Merlot, Syrah, Tempranillo and Chenin Blanc. White wine lovers will enjoy the “Quercus” Chenin Blanc with bright, crisp citrus overtones and a buttery finish.
This family-operated winery only uses their own grapes for their wine production (they don’t buy from anyone or sell to anyone) and the wines that they are creating are exquisite and not to be missed.
