There are quite many caves in Thailand and around that are more interesting than this one. Chiang Dao Cave is well lit in one tunnel and the other one needs a guide and extra torch.
Chiang Rai is beautiful, there are many places where you can relax in nature, see tea plantations and walk up and down the hills. There are the best temples I've seen and many things to do around the town. 3-4 days is perfect to spend here, to sightsee a bit and relax.
Very good food, various dishes but prices are a bit high at some stalls. You can try to bargain, sometimes will work. There are plenty of noodles to choose from, just go for something new and you won't regret it.
The show itself is nothing special, there are just colors changing and the music being played. Although many people gather in nearby bars to watch it with a drink.
